Once you have created a GIS exchange cluster, in anticipation of updating a model,

By updating the file path in the DB Editor, these field mappings from the PIPE_UPDATE cluster are preserved. If the GIS data source were updated directly within the Exchange Cluster dialog, all the field mappings would be cleared, and all the fields would need to be remapped.
